Default engine temp?

i have a 85 js440 with some work done to it, not sure whats inside but do know it has a coffman pipe on it. im new to the jet ski world and im not sure of the temp a ski should run at. My first time on a stand up (this ski) it seemed as if the exhaust temp was way too hot. ive owned jet boats for the past 3 years and getting them to opperating temp is usually the problem not overheating. any help is greatly appreciated and any tips are welcomed. i do know the motor runs good and strong under load. now being my first time on a stand i spent some time on my knees riding it and the pump was cavatating a bit but once standing up it was fine, not sure if that would cause the issue either. and yes i do have water coming out the side dump and pipe. it does seem skimpy to me but again im a noob
