Default 1989 Yamaha Waverunner help

Hi, I have (two) 1989 yamaha waverunner, with a couple different issues, first one runs well, but occasionaly after running on the water for an hour or two, when I come in for a break and then try to start it again it wont start, it cranks but doesnt catch..... almost seems like its flooded, whats the process to restart, turn it over with full throttle until it starts up?

#2 ski starts right up, will have pretty good speed, but no power and no high end, especialy if im pulling someone on a tube / kneeboard, the other ski pulls a tube no problem. i wasnt sure if the screws on the carbs need to be adjusted or if there is a different issue? the impeller looks like its seen better days and I have a new one, could this be part of the problem? im pretty handy and would like to try to change the impeller out myself and go from there..... where should I start?
