Default Rebuilt STX1100 engine blew up after 20 min

I completely rebuilt 2 2000 STX 1100 di engines. Before I test the second one I am trying to figure out why the first one went bad. All 3 pistons show heat damage on the exhaust side. I added oil to the gas as the manual suggested for the first run. It worked great for awhile then I noticed it labouring. It started taking on water and I couldnt figure it out. When I got back to sure I realised that the short water hose from the top of the manifold to the head had poped off allowing water to flow inside. Would that hose popping off cause massive overheating?

I would appreciate any comments!!
