Default Slth question

I have inherited a polaris 1998 slth....It has been kept on the lake in a slip since it was purchased.....Hasn't been ridden in at least 3 years due to a hole in the hull....It was charged and cranked at least two or three times each year....I have since moved it from the lake(without a trailer) to do the repair on the hull....I know cranking it out of the water is not a good test and i am worried about the jets being clogged since it sat for so long.....It cranks fine and runs good but i don't want to haul it back to the lake and have problems since i don't have a trailer....So my question is, is their any way to test out of the water to simulate the conditions of the water........Second question, how hard is it to rebuild the carb on this one, about two years ago i rebuilt the carbs on a johnson outboard, but never could get the link and sync right.....Any suggestions???
