Default uneven running @ WOT 787 Dual carb. *Noobie needs help!*

Ok, so call me a noobie, because I am. I have been riding for 18+ years. I have a good understanding of how engines, jet skis, etc work. My fam got a 92 Sea Doo SPI, and we rode it for a few years. Then we got a Polaris SLT 750. It was first one i rode solo on. Then we went big, got a Sea-Doo GTX RFI. Awesome Machine!!! Then I decided to get my own. I have a 1997 Sea-Doo GSX with the 787 engine. its got about 140hrs on it, and I took it out beginning of summer, did proper warm up, and did a steady run up. It ran AWESOME! all of a sudden, later in the day, it failed to reach top speed. anything over half throttle, or over 30-35 mph, it would feel like its going, then lose power/drop rpm suddenly, then go, then lose it, etc. checked fuel filter, changed spark plugs, put additive in fuel tank to try to clean out fuel system. then went out again, it ran awesome for about 45 minutes again, then same thing.... it feels like it wont shift into high gear, its weird. I was thinking it might be R.A.V.E valves, but I dont know how to test them.

Dont get too complicated. Check compression,but I suspect carbs need to be rebuilt. Replace lines if they are old tempos.
