I have a little problem. My exhaust temperature sensor light is giving me the "warning". The jetski has been serviced and runs fine. It's got only 57 hours on it.

Is it possible that the sensor has gone bad and needs to be replaced or is it that it is actually indicating that the temperature is high in the exhaust system?

I shut off the jetski and start it again and the warning is gone... it may come back later on... once again...

Yeah just replace the temp sensor. Can you touch the engine head when it reads warning. If you can it will be a faulty sensor. When you pull it out you will see how little the wires are and how easily they pull out.
