I just bought a 2019 yamaha vx deluxe and have only put 7 hours on it and will probably not have it out again this year. They recommend changing the oil at 10 hours. Would you go ahead and change it at 7 hours or wait til next season til it hits 10?

Personally I would err on the side of caution, better to change the oil early than late.

Alternatively you could just find some excuse to put another 3 hours in before it gets too cold...

Welcome aboard cncsignman.
Although your short a few hrs. I'd go ahead and change it. Reason being when left to set for winter. Any contaminants in the oil will settle out to the bottom of the tank and case. For this reason all my seasonal equipment gets an oil change before fall bed time.
