I recently acquired a free 1988 Kawasaki jetski in need of some tlc. I got the pink slip, but it doesn't say anything about the model or engine size. Is there a way to know from the VIN? What are some other ways to determine what I have?

Well, from the pictures its a 2-cylinder which eliminates the 300 right off and means its either a 440 or 550.

Normally the engine will have a little metal sticker designating the displacement, but it looks like your ID sticker is gone.

Are you sure it's indeed a 1988 model? The picture appears to be a pre-1986 550 engine based on the exhaust configuration, but I dont see the 'elephant trunk' exhaust exiting the front left side of the hull.

There may also be a way to figure out from HIN, but I don't know. You can always try a Google-search or call your Kawi dealer and see if they can tell based on the HIN.
